Snacking Part III


Snacking Part III!! These are more of the lunch/brunch types of food. Like dessert stuff and all that good stuff. Some of these are life food hacks that you can use. Like that one moment where your mom won't make anything on Sunday mornings but you still want something delicious.
Tortilla Snack

Take a pan and place a reasonable amount of butter on it. Turn the heat on low and drizzle some olive oil. Use the bottom of a spoon to spread the olive oil over the bottom of the pan. Place your tortilla on it and flip it occasionally. Keep doing that until each side is crispy (don’t make it chip crispy). Turn the heat off for now and place the tortilla on a paper towel. In the olive oil pan, toss in some diced tomatoes, onions, bell peppers (remove the seeds), sausages, and if you’re looking for a bit of spice, jalapeños or chili peppers are good. Let that simmer then add some salt and pepper. Add a tablespoon of water to the seasoned vegetable mix. Once your veggies are ready and well cooked, turn off the heat and set it aside. Place your tortilla in another pan and place it on a low heat. Pour the vegetables inside and fold over the tortilla. It’s a really nice snack, think of it as an omelet with no eggs J
Minute Microwave Cheesecake

 2 ounces cream cheese, softened

 2 Tbsp sour cream

 1 egg                               

 ½ tsp lemon juice

 ¼ tsp vanilla

 2-4 Tbsp sugar replacement sub (taste as you go)

 

Mix all ingredients thoroughly in a microwave-safe bowl. Cook on high heat for 90 seconds, stirring every 30 seconds incorporating all ingredients. Refrigerate until serving. And if you want, add some whip crème on top and maybe some raspberry sauce J
 

Coffee Cup Cake

Add a tablespoon of butter into your mug

Soften the butter in the microwave for 10-15 seconds (soften not melt)

Stir in two tablespoons of sugar until it’s fullfy and creamy, maybe 30 seconds

Now you can add some egg, you don’t have to, but without egg it’s more crumbly and less cake-y you can do a whole egg but I like to breake the egg into a ramekin and stir it up then split it between two cups of coffee cake.

Then stir in 2 tablespoons of sour cream and few drops of vanilla

Stir in ¼ cup of flour and 1/8 teaspoon baking powder

Microwave it

Start with one minute and then do 10 seconds more to your liking
 
 
Starbuck Style Nutella Hot Chocolate
Take 3 tablespoon of Nutella (or however many you want)
And microwave it for 10-15 seconds
Take some milk and pour it into a mason jar, filling it no more than halfway. Secure the lid and shake it for 30 seconds. Remove the lid and microwave it for another 30 seconds. Using a spoon, hold back the foam and pour the milk into the cup of Nutella. Then mix up the frothy milk and Nutella mixture til everything is even. Then add in the froth from the mason jar.
Place some whipped crème on top of the mixture, the foam should support it. Take Nutella and some milk and microwave it together for 20 seconds. Mix the Nutella and milk up and drizzle it over the whipped crème. Enjoy! If you want you can add some hazelnuts on top of it.
 
Ramen Pizza (Sounds gross but try it)
Take some ramen and toast it in the microwave (it seriously depends on how you want it toasted, keep an eye on it) Take some tomato sauce and add in some basil, oregano, and parsley. Add in a little ramen powder for the spice and flavor and pour it over the toasted ramen. Microwave it for a couple of seconds until the tomato sauce is warm. Then add some cheese on top and let it melt. If you want, you can add pepperoni or veggies on top.
